Winter Greens, Potatoes and Chickpeas Stew

Serves 4

Greens, Potatoes and Chickpeas Stew

This is a nice soup for those desiring a vegetarian meal for a cool day’s lunch or dinner. The ingredients can be varied which I feel always adds interest to your dish. It’s also a complete protein meal so you don’t have to worry about having poultry, meat or fish as well.  Bon Appétit.

Ingredients:

  1. 1 Lb. Chard, stems removed (I used the rainbow variety) You could also use spinach or Kale or a combination of the greens.
  2. 1 ½ Lbs. Baking Potatoes (I used 2 large ones but 3 medium ones would be OK as well)-Sliced in 3/4 inch-slices
  3. 1-2 Onions, rough chopped or even thinly sliced
  4. 2-3 Garlic Cloves-minced
  5. 3 Tblsp. Olive Oil
  6. 1 Tsp. Paprika
  7. 1/4 Tsp. Turmeric
  8. 1/8- 1/4  Tsp. Cayenne Pepper (depending how “hot” you want your stew)
  9. 1 Tsp. salt (optional)
  10. 4 C. of  Vegetarian Base Bouillon or Chicken Stock, heated
  11. 2 C. (1-16 oz. can) of chickpeas, drained and rinsed (you can also use another type of white bean)
  12. 2 Hard Boiled Eggs, Sliced or cut into wedges (optional)
  13. One Tasty Tomato, Sliced (optional)
  14. Shaved Parmesan or Jack Cheese for topping (optional)
  15. Chopped Parsley for garnish (optional)

Directions:

  1. Cook your greens any which way you wish; drain thoroughly and set aside.
  2. In a large stove top Dutch oven or similar kind of pot, heat the oil over medium heat and add the potatoes, onions and garlic cloves.  Sauté for 5-10 minutes—watching carefully and stirring quite often—until the potatoes have started to brown. Add to this the paprika, turmeric, salt and cayenne until the mixture smells fragrant (around 1-2 minutes).
  3. Add the bouillon, greens and chickpeas and bring to a simmer.  Simmer with a tipped top for about 15 to 20 minutes—or till the potatoes are tender.
  4. Serve the stew topped with the hard boiled eggs, tomato slices, cheese and chopped parsley.

Zucchini au Bon Gout

Simple, Easy, Fresh and Healthy plus Lovely to Look At.  That’s what this recipe is all about.

Zucchini Au Bon Gout

Serves 8

Ingredients:

  1. 1.       8 small whole zucchini, scrubbed and trimmed
  2. 2.       2 C. peeled ,chopped tomatoes (canned & drained is fine)
  3. 3.       1 C. bread crumbs, cooked in butter until crisp or packaged if need be
  4. 4.       S&P to taste
  5. 5.       Grated Parmesan

 

Directions:

  1. Preheat oven to 450
  2. Simmer the zucchini in a little water until BARELY tender (8 to 10 minutes depending on the size). Drain and cool.
  3. When the zucchini are cool, cut in half lengthwise.  If need be, scoop out the seeds from each half and invert the halves to drain.
  4. In a baking dish, arrange the zucchini, cut side up, and fill the cavities with equal parts chopped tomatoes and croutons.  Sprinkle with S&P and cheese.
  5. Bake until heated through.  Then brown under the broiler just before serving.

 

 

 

Florentine Crusted Quiche

Florentine Crusted Quiche

Serves 6

 

It’s nice to enjoy a really tasty quiche that you know is totally healthy for you as well as light caloric wise.  Thinking about this crust, which is made with spinach, chard, or any of that similar green leafy veggie, Catherine de Medici of the early 16th Century comes to mind.  She was an amazing woman for her time and age and still today would be.  When she became queen of France, she so loved her spinach that she insisted it be served for every one of her meals.   Catherine originally haled from Florence, Italy and therefore, her many spinach dishes created and made with spinach by her French chefs were named Florentine.   So full circle here—you can see why I’ve named this quiche Florentine Crusted Quiche.

Crust Ingredients:

  1.  2 Tblsp. Olive Oil
  2. 1/2 Onion sliced very thin
  3. 1 ½ C. thinly sliced mushrooms
  4. 1 C. washed and packed chopped spinach, chard or any other green that suits your fancy
  5. 1/2 Tsp. salt and black pepper
  6. 2 Tblsp. cornmeal
  7. 2 Tblsp. water

Filling Ingredients:

  1. 6 eggs
  2. 1/2 C. milk or half-half or cream—can be fat-free—up to you.  Of course, the richer the yummier
  3. 1/4 Tsp. salt and black pepper
  4. 1/4 Tsp. nutmeg or another of your favorite spice to accommodate your cheese choice
  5. 3/4 C. of your favorite shredded cheese
  6. 3/4 C. diced ham or bacon bits or whatever suits your fancy (optional)

Directions:

General Initial Directions:

  1. Pre-heat the oven to 350.   Place one rack in the middle position.
  2. Oil or spray a 9-inch cooking dish that will accommodate a quiche.

Crust Directions:

  1. In a large skillet heat the olive oil and then add the onion stirring till nice it is brown and glossy (about 3-4 minutes); then add the mushrooms and stir them until well moistened and browned  (about 5 minutes); then add your greens and S&P and cook till the greens are nicely wilted; then add the cornmeal and water and stir till the total mixture is well blended.
  2. 2.       Press the above on the bottom and up the sides of your prepped cooking dish.

Filling Directions:

  1. Beat eggs, cream and S&P thoroughly.
  2. Fold in cheese and diced ham or bacon.
  3. Pour filling into your prepared dish.

Very Final Directions:

  1. Place the quiche on the middle rack in the oven for about 1 hour.  Test the middle for it being done with a toothpick or fine knife for it to come out clear.
  2. Let the quiche sit for 10-15 minutes before serving.

 

 

 

Huevos en Avocados

Well priced avocados still are bountiful at Atkinsons’.  They are a nice large size and delicious tasting so here’s another easy and yummy recipe for anytime really—but of course perfect for breakfast.  I serve this with warm tortillas, but a crusty baguette or toasted English muffin would also make a nice accompaniment.

Ingredients:

  1.  Avocados— as many as you wish
  2. Eggs—as many as you wish
  3. Diced cooked ham or bacon (of you can fry the bacon stove top while your dish is in the oven and sprinkle the bits over the avocados when they are done) (optional)
  4. Chopped green onions—the whole thing
  5. Fresh cracked black pepper (optional)
  6. Paprika and/or Chili powder (optional)
  7. Mexican shredded cheese (optional)
  8. Salsa (optional)

Directions:

  1. Pre-heat oven to 425
  2. Line your desired baking dish that you will be using with aluminum foil.
  3. Cut the avocados in half, length wise.  If there is not enough of a dip in the avocado to hold an egg, take some of the flesh out so that you’ll have a nice dip.
  4. Place the avocados in the dish and place a cracked egg in each.  Some of the white may run over, but that’s OK.
  5. Top the avocado and the inserted egg with your options listed in the ingredients. You might think of even more options, such as sour cream, etc.
  6. Place the dish in the oven for 20 minutes.  You can see if you like the results at 15 minutes, but mine is perfect in 20 minutes.

Guacamole with Toronja (grapefruit)

Toronja (grapefruit) Guacamole with Oven Baked Tortilla Chips

Serves 4-6

2 for 4—that is at Atkinsons’ Market in Ketchum, ID. I bought 2 delicious large avocados for $4.  They come from Mexico and truly are so tasty and sweet, it’s hard to believe that they arrived here in that condition.  YUM!! So, here’s a new twist to the ole’ guacamole and I think that it’s really good to eat with chips, or as a veggie wrap or with fish tacos. You can store the guacamole in the refrigerator for several days but here’s a tip: forget the old tradition of putting the pit in the avocado to keep it from turning brown.  What makes the avocado turn is oxygen (air).  So, if you wrap it thoroughly in wrap or in a container so that NO AIR can reach it, it’ll stay green.   As well, I’ve included an easy way of making your own tortilla chips.  Buenos apetito!!!

Ingredients:

  1. 2 large ripe avocados or 4 small ripe avocados
  2. 1 medium grapefruit—I used a ruby one
  3. 1 small onion, diced
  4. 1 jalapeno, seeds taken out and minced
  5. 1/4 C. chopped fresh cilantro
  6. 1/4 Tsp. salt
  7. A bit of diced garlic and a splash of lime if you wish

Directions and put the following ingredients in a medium size bowl:

  1. I processed the onion and jalapeno into dice chop. But you can hand dice as well.
  2. Cut the grapefruit crosswise; serrate and cut out and drop the individual sections over the bowl—so as to catch the juice as well.  Remove whatever seeds fall in.
  3. Cut the avocados in half, length wise; remove the pits; remove the flesh and put in bowl.  You can do this with a spoon but I cut the flesh criss-cross wise and scoop it out that way.
  4. Add the chopped cilantro and salt.
  5. Mash it all with a potato masher or a fork.
  6. Serve it immediately or store in refrigerator till ready to serve. I think that it gets better when refrigerated for a bit.

Oven Baked Tortilla Chips

 

 Ingredients:

  1. 12 corn tortillas—white or yellow
  2. 1-2 Tbsp. safflower or other like kind oil (can be optional)
  3. Fine or Sea Salt to taste (optional)

Directions:

  1. Brush BOTH sides of the tortillas with the oil.
  2. Stack the tortillas and cut the pile into sixths or whatever size you wish for your chips.
  3. Spread the chips in one layer out on parchment lined cookie sheets and season with salt to taste.
  4. Bake until golden brown and crisp for 12-15 minutes.  Rotate the sheets half way through this time period.
  5. Place on a paper towel to drain and then store in a paper bag.
  6. You can also bake the chips without any oil.  They just might not be quite as tasty, but certainly will contain fewer calories.
  7. And of course, you can go the full route, and deep fry them.

Tasty, Easy and Healthy

Ingredients:

  1. 2 peeled carrots—1 cut crosswise in 1 inch pieces; the other shaved with a peeler.
  2. 7 whole Brussels sprouts
  3. 2 garlic cloves—peeled or unpeeled
  4. Chives—green and whites chopped
  5. 3 whole cloves
  6. 2 florets of a whole star anise
  7. 3/4 C. chicken bouillon

Directions:

  1. Place all the ingredients in a medium sized pan. Bring the bouillon to a boil; lower the heat to an active simmer (medium low)  and cook till carrots and sprouts are tender (about 10 minutes).  Remove whole cloves and anise florets before eating.

 

 

Crudities with Green Goddess Dressing

Makes 12-18 appetizer servings

 

Crudities Ingredients:

  1. 2-3 lbs. small raw mushrooms
  2. 2-3 lbs. asparagus (tough ends removed)
  3. Broccoli (cut into small flowerets)
  4. Small peeled carrots
  5. Edible-pod peas
  6. 40 to 50 small inner leaves from 3-4 heads of romaine lettuce(washed/crisped)

Green Goddess Dressing ingredients (makes 1 ½ C)

  1. 3 large egg yolks
  2. 3 Tblsp. white wine vinegar
  3. 2/3 cup chopped parsley
  4. One 2-oz. can anchovy fillets
  5. Green onions, chopped including the tops
  6. 1 ½ Tsp. dry tarragon
  7. 1 ½ C. olive oil

Directions:

  1. Place all of the ingredients except the oil in a blender and whirl until a smooth puree.  Slowly add the oil till well blended.
  2. Serve or cover and chill for up to a week.

Fennel Salad a la Siciliana

Serves 4

 

Ingredients:

  1.  3 or 4 Honey Tangerines or 3 blood or navel oranges
  2. 1/4 C. olive oil
  3. 1 Tblsp. red wine vinegar
  4. 1 Tblsp. or more of minced fennel tops
  5. Salt and Pepper
  6. 2 bunches trimmed arugula (I used the baby arugula)
  7. 2 medium fennel bulbs, cored, and halved and trimmed
  8. 1/4 C. oil cured black olives

Directions:

  1. I sectioned the tangerines and used them.  If you are using oranges, discard peel and all of the white pith; then slice crosswise into thin rounds and set aside.
  2. Mix together the olive oil, red wine vinegar and minced fennel tops.  You can either put this in the salad bowl along with the S&P before you put in the rest of the ingredients or you can mix it in a jar or pour it on after the salad is in the bowl.
  3. If you are using regular arugula, tear it into large pieces and arrange in the bowl. If you are using the baby arugula, just throw it into the bowl. Slice the fennel bulbs into long strips and place on top of the arugula.
  4. Toss the salad just before serving, adjust the seasoning, and then arrange the orange slices or tangerine sections on the top along with the black olives.

 

Mélange of Oven Baked Vegetable with Basil

Mélange of Oven Baked Vegetable with Fresh Basil

Serves 4-6 as a main dish or 8 as a side dish

This is a dish that is not only gloriously healthy but visibly gorgeous as well

For the baking, using this recipe as is, I use a 17 X 14 high sided octagonal aluminum turkey pan

Fast, before it’s too late; the fresh veggies are at their prime now.  Farmers market or commercial markets, this is when you find them at their very best.  This dish is a bit time consuming but honestly, it’s worth the effort.  And best of all, it’s a glorious looking dish and it’s great for left-over’s.  Actually, it becomes tastier after having congealed a day or two.  If this dish doesn’t deplete fast enough for your desire, next week I will be offering two additional really tasty recipes that you can make from the left-over’s.

Ingredients:

  1. 10 garlic cloves
  2. 2 large onions thinly sliced or 4 smaller ones
  3. Zucchini-2 lbs.-I cut them long ways in quarters and then sliced them
  4. 2 large eggplant, about 2 lbs. total, sliced ½-inch thick and salted (you can leave the skin on and if you have time salt them liberally, put them in a colander and let them drain their liquid for 1/2 hour up to a couple of hours.  Then pat them dry.)
  5. A total of 4 assortment of red, yellow and orange bell peppers, stemmed, peeled if desired,( I didn’t peel them) seeded and sliced into 3-4 pieces each
  6. 4 or more if you think needed ripe red tomatoes—if you wish they can be cored, skins and seeds removed and cut into thick slices however I didn’t do that.
  7. 20 fresh basil leaves torn in half (or you can use 1 Tsp. fresh thyme, rosemary or savory leaves but I really like the basil).
  8. 1 C. flat leaf parsley-chopped fine
  9. 1 ½ Tsp. salt and some ground pepper to taste
  10. 1/2 C. to 1 C. of olive oil
  11. Extra fresh herbs and grated Parmesan for garnish

Directions:

  1. Preheat oven to 350.
  2. Peel garlic and cut in half. (Hints for easy pealing: Drop in boiling water; leave it there for 30 seconds, remove and peel. Or toast in dry skillet over medium heat, shaking frequently for 3-4 minutes.)
  3. In a casserole, make two layers of the following and it’s best to use the order listed below:
    1. Onion
    2. Eggplant
    3. Peppers
    4. Tomatoes
    5. Zucchini
    6. Parsley
    7. Basil or herbs
    8. Salt
    9. Pepper
    10. Garlic cloves
  4. Drizzle the Mélange with olive oil and place in the oven.
  5. Bake in a large pan that has high edges for about an hour, pressing down on the vegetables occasionally, until they are all completely tender.
  6. Garnish and serve hot or at room temp.

Mélange of Oven Baked Vegetable with Fresh Basil Additional Left-Over’s Recipes

So, here it is just as I had promised.  Enjoy!!!!

  1. In a large saucepan, heat about enough chicken or if you prefer, a vegetable stock to combine with the amount of leftover veggies you have.
  2. Puree your veggies along with the stock with a processor or immersion blender.
  3. If  the mixture is too thick, thin it down a bit with more stock until it’s the consistency that you wish. If it’s too thin, add some crushed croutons.  You can also add some canned well rinsed white beans.
  4. Serve topped with Parmesan and more croutons or a float of sherry.
  5. Healthy, easy and perfect on a cold day.

Melange of Veggies Dip or Spread

(For very healthy, easy to grab snacking or for party appetizers to be served with crispy crackers or crusty French bread slices).

  1. Put your left-over casserole bits in a blender and blend it till it makes a nice spread.
  2. For appetizers, this is the way I like to serve it: On a thinly sliced toasted baguette I spread some room temp or even cold spread and top it with crumbled goat cheese and some water cress leaves.  It’s delicious.  However, you can also do the warm versions below.
  3.  You can do the work for your guests and place a dab of the spread on thinly sliced baguette slices, top them with Parmesan or some other cheese of your desire, place on a cookie sheet and carefully broil or bake at 450 till bubbly and perfect to serve.
  4. Or the easier, lazy way is the following:  you can heat the total amount of the spread topped with some cheese in an oven proof dish nice enough to serve your guests and place the bowl on a platter surrounded by crispy crackers or thin slices of crusty baguette and let the guests do their own serving.
  5. Or you can even use the left-over’s unblended but placed on top of some thawed frozen pastry to make a Provencal pizza.  For extra toppings you use some chopped pitted black olives, anchovy fillets and Parmesan.  Before putting the extra toppings bake the “ratatouille” on the rolled out and fork pricked pastry in a 400 degree oven for about 18 minutes; place on the extra toppings and bake an additional 4-5 more minutes.  Slide on a cutting board sprinkle with a bit more cut basil, cut into squares and serve.

Ginger Carrot Soup

Ginger Carrot Soup

Serves 4

 

“And a bigger thanks for last night—we’re still talking about how great the food was this morning. Our kids LOVED the soup….”  This lovely compliment about a Valentine catered dinner I did was about this soup.  I must agree, it really is good. 

 

Ingredients:

  1. 2 Tblsp. olive oil
  2. 1 3-inch piece of fresh ginger, peeled and coarsely chopped (about 1/4 C.)
  3. 1 small yellow onion, coarsely chopped (about 3/4 C.)
  4. 4 C. mini peeled carrots –about 1 ¼ lbs. (you can find these in a package at your grocery store)
  5. 5 C. vegetable broth
  6. 1/2 C. fresh orange juice
  7. Pinch of ground nutmeg
  8. S&P to taste
  9. Crème Fraiche or sour cream for garnish

Directions:

  1. Heat oil in a large saucepan over medium heat.
  2. Add ginger and onion and cook, stirring occasionally, until soft and fragrant (about 5 minutes).
  3. Add carrots, stock and juice. Raise the heat to medium-high and bring to a boil.  Reduce heat to low, cover and simmer until carrots are very tender (about 45 minutes).
  4. Puree the soup in the saucepan using an immersion blender. Or if you don’t have one of those wonderful implements, let the soup cool and puree in a blender or food processor and return to the saucepan. The soup will be quite thick in texture and if you would look a smoother soup, pass the mixture through a sieve.  I left it thick and everyone loved it that way.
  5. Add nutmeg, S&P to taste.
  6. If the soup still looks too thick for your taste, you can thin it with a bit of water or vegetable stock.
  7. This soup can be served chilled (refrigerate for at least 6 hours and up to 5 days), or at room temp or hot.  I reheated mine because my clients wanted it hot.
  8. Garnish with a spoonful of crème fraiche or sour cream.  And I put one sprig (standing straight up) of green onion top in mine.
